Ingredients for Eggplant Poke Recipe
- 4 eggplants
- 2 onions
- 3 tomatoes
- 2 cloves of garlic
- Optionally, 1 tablespoon of pomegranate syrup (real pomegranate syrup)
- 1 pinch of salt
Without peeling the eggplants, we cut them into two finger thick rings and poke them in a few places with a knife. We fry them in hot oil and put the eggplants on a plate. We pour the remaining oil in the frying pan, chop 2 onions into the pan and fry them until they turn pink. Then we put the fried eggplants in it, add the diced tomatoes and finely chopped garlic, then close the lid and turn the stove down.
